GLUTEN FREE SPAGHETTI BOLOGNESE
Serves: 4-6

Prep Time: 15 Minutes

Cooking Time: 30 Minutes
INGREDIENTS

    1 pound lean ground beef or turkey
    2 cans Italian style tomatoes
    8 ounces sliced mushrooms
    1 medium yellow squash
    1 green bell pepper
    1 tablespoon oregano
    1 tablespoon parsley
    1 teaspoon cumin
    1 teaspoon paprika
    1 teaspoon salt
    1 teaspoon pepper
    May also add onion and/or jalapenos or use eggplant instead of squash
    cup sour cream if desired



INSTRUCTIONS

1.    Dice yellow squash and seed and dice bell pepper.

2.    Brown ground beef in large pan and drain fat. 

3.    Place all vegetables and seasonings into pan with beef.  Stir, cover, and simmer approximately 30 minutes until vegetables cooked down  
       and soft. Add sour cream if desired.

4.    While sauce is simmering, cook spaghetti as directed on package.
