GLUTEN FREE PENNE AND TOMATO SALAD

Cooking Time: 5 Minutes
∑ 8 oz. gluten-free penne pasta (corn, rice or corn and rice blend, we use Heartland Gluten Free Penne)
∑ 3 cups fresh spinach leaves
∑ 2 cups grape tomatoes
∑ 1 cup crumbled feta cheese
∑ Ĺ cup chopped basil
∑ Gluten free balsamic vinaigrette (If you canít find it in the store: Mix 5 tablespoons balsamic vinegar, 1 large clove minced garlic, 1 tablespoon Dijon mustard, 1 cup olive oil, and salt & pepper)
1. Prepare the penne according to the package directions, cooking until al dente.
2. Chop the spinach and cut the grape tomatoes into halves.
3. Mix the drained penne and Ĺ cup of balsamic vinaigrette, and then stir. Stir in the spinach, tomatoes and feta cheese until evenly mixed and all ingredients are coated with vinaigrette.
4. Sprinkle the basil over the top of the salad and serve.
NOTE: You can make this salad into more of a meal by adding chunks of ham or shrimp.
