ORANGE ROUGHY WITH LEMON

INGREDIENTS

    2 pounds orange roughy filets
    1-2 tablespoons olive oil
    1 orange, juiced
    1 lemon, juiced
    Lemon pepper to taste



INSTRUCTIONS

1.     Heat oil in a large skillet over medium-high heat.  Remove from heat and place filets in skillet.  Pour lemon-orange mixture over fish and season with lemon pepper.  Return to heat and cook approximately 5 minutes, or until fish flakes easily with a fork.  Turn once during cooking.

2.     Remove fish when done and continue to cook sauce until slightly thickened, about 3 minutes.  Pour sauce over fish and serve.
