MOLTEN HOT FUDGE CHOCOLATE CAKE

Baking Time: 35-40 Minutes
INGREDIENTS

·    1 ¼ cup granulated sugar, divided
·    1 cup gluten-free all-purpose baking flour (I use Bob’s Red Mill)
·    ½ teaspoon xanthan gum (suggested on baking flour package)
·    ½ cup Hershey’s Coca, divided
·    2 teaspoons baking powder
·    ¼ teaspoon salt
·    ½ cup milk
·    1/3 cup melted butter or margarine
·    1 ½ teaspoon vanilla extract
·    ½ cup packed light brown sugar
·    1 ¼ cup hot water



INSTRUCTIONS

1.    Pre heat oven to 350 degrees F.

2.    Mix together ¾ cup granulated sugar, gluten-free flour, ¼ cup cocoa¸ baking powder and salt.  Stir in milk, butter and vanilla.  Beat with spoon until smooth.  Pour into ungreased 9 inch square baking pan.

3.    Mix remaining ½ cup granulated sugar, brown sugar and ¼ cup cocoa.  Sprinkle evenly over batter.

4.    Pour hot water over top.  DO NOT STIR.

5.    Bake 35-40 minutes or until center is almost set.  Let stand 15 minutes.  Serve in dishes, spooning sauce from bottom of pan onto cake.

6.    Garnish with ice cream or whipped topping if desired.
