GLUTEN FREE ROASTED RED POTATOES
Prep Time: 10 Minutes
Cooking Time: 30 Minutes
· 1 ½ pounds small red potatoes, cut in half
· 2 tablespoons olive oil
· Salt and pepper
1. Place oven rack in lowest position and preheat oven to 400 degrees F.
2. Toss potatoes with olive oil and salt and pepper. Arrange cut side down on a cookie sheet.
3. Roast 20- 30 minutes until tender and browned (check after 20 minues).
