GLUTEN FREE TRADITIONAL LASAGNA

ˇ 1 pound ground beef
ˇ 1 teaspoon minced garlic (or 1 clove)
ˇ 1 tablespoon parsley flakes
ˇ 1 teaspoon basil
ˇ 1 teaspoon pepper
ˇ ˝ teaspoon salt
ˇ 1 can diced tomatoes with basil, garlic and oregano
ˇ 2 small cans tomato paste
ˇ 1/2 box GF lasagna noodles (I use gluten free Café Rice Lasagna No Boil)
ˇ 12 ounces cottage cheese
ˇ 1 eggs, beaten
ˇ 1 teaspoon salt
ˇ ˝ teaspoon pepper
ˇ 2 tablespoons parsley flakes
ˇ ˝ cup Parmesan cheese
ˇ 1 pound Mozzarella cheese, shredded
1. Brown meat and drain grease. Add garlic, 1 tablespoon parsley, basil, 1 teaspoon pepper and ˝ teaspoon salt. Stir in tomatoes and tomato paste.
2. Combine cottage cheese, eggs, salt, pepper, parsley and Parmesan cheese.
3. Spread a spoonful of meat sauce in the bottom of a 9x9 inch baking dish. Place a layer of noodles over sauce then place 1/3 of remaining sauce over noodles. Layer with cheese mixture and 1/3 of Mozzarella. Repeat layers two more times ending with Mozzarella. Cover with aluminum foil and bake at 350 degrees F for one hour. Check noodles for doneness and allow more baking time if needed. Remove from oven and let rest 15 minutes.
