GLUTEN FREE GRANOLA
Makes: 3 cups

Prep Time: 10-15 Minutes

Cooking Time: 10-30 Minutes
INGREDIENTS

    2 cups gluten-free old-fashioned oats (must be old-fashioned and not quick cook)
∑    1/2 cup sliced almonds
    1/4 cup sweetened flaked coconut
∑    1/8 cup unsalted hulled pumpkin seeds
    1/4 cup pure maple syrup
∑    1 tablespoons vegetable oil
∑    1/4 teaspoon kosher salt
∑    Dash of cinnamon (optional)
∑    1/2 cup dried fruitł such as cranberries, cherries, raisins, or currants

*Note*  You can substitute the nuts and fruits to what you have on hand or to your tastes.



INSTRUCTIONS

1.     Place rack in center of oven and preheat to 350 degrees.

2.    Combine oats, almonds, coconut and pumpkin seeds in large mixing bowl.  Drizzle oil and maple syrup over mixture and add salt and cinnamon. Stir to combine then spread mixture on a rimmed baking sheet.

3.    Bake granola tossing it once or twice with a spatula until the oats and almonds are golden.  Cooking time may need to be decreased if using a dark pan or if recipe cut in half.
 
4.    Remove from oven and stir in dried fruit.  Let cool for about 2 hours.  Store in a tightly covered container at room temperature for up to three weeks.
