    2 lb chicken breast
    2 teaspoons paprika
    teaspoon salt
    teaspoon pepper
    1 teaspoon cayenne pepper
    1 teaspoon cumin
    1 teaspoon thyme
    teaspoon onion powder


1.    Preheat oven to 350 degrees.  Heat a cast iron skillet over high heat until smoking hot (about 5 minutes).  See notes below for grilling or regular skillet instructions.

2.    Mix paprika, salt, cayenne, cumin, thyme, pepper and onion powder in a shallow dish.  Oil the chicken breasts with cooking spray on both sides, then coat the chicken with the spice mixture.  IT IS VERY IMPORTANT TO OIL THE CHICKEN AND NOT PLACE OIL INTO THE HOT SKILLET!  FIRE MAY OCCUR.

3.    Cook the chicken in the skillet for about 1 minute per side.  Place the entire skillet into the oven and cook until juices run clear.  About 20 minutes.

You may also grill the chicken.  Allow the grill to become as hot as possible, place the chicken on the grill, then immediately turn the temperature to lowest temperature possible.  Grill for 5-6 minutes and flip.  Continue to cook until juices are clear.

You may also use a heavy skillet.  Place it on the stove, get it very hot and sear chicken on both sides.  Transfer chicken to lightly greased baking sheet to finish cooking in oven.
