GLUTEN FREE STUFFED BELL PEPPERS
Serves: 6

Baking Time: 40 minutes
INGREDIENTS

    6 large bell peppers-any color
    1 pound ground turkey or lean beef
    1 small onion, chopped
    1 teaspoon salt
    teaspoon pepper
    2 cloves finely chopped garlic
    1 10 ounce can Rotel tomatoes
    3 tablespoons Worcestershire sauce
    cup uncooked rice
    cup water
    1 cups shredded cheese
    24 ounces traditional pasta sauce (I used Ragu Old World Style)


INSTRUCTIONS

1.    Brown turkey with onions and garlic until no longer pink and drain.  Add salt, pepper, Rotel tomatoes, Worcestershire, rice and water.  Bring to a boil, reduce heat and simmer covered for 15 minutes or until rice is tender. 

2.    Stir in pasta sauce and 1 cup of cheese.

3.    Preheat oven to 350 degrees F.
 
4.    Cut the tops of the bell peppers off and clean out seeds.

5.    Fill the peppers with meat mixture.  Sprinkle remaining cheese on top.  Cover with foil and bake for 40 minutes.
